I love rotating through simple easy to assemble meal themes each week to keep cooking easy and still some variety since I don’t like to eat the same thing everyday. One of my favorites is einkorn pizza-I’ll make enough dough to last a few days, then get creative with different toppings. With a base of pizza sauce and mozzarella, it becomes a quick, nourishing meal that’s easy to assemble and some variety with the toppings.
